Classic Chocolate Cornflake Cakes
Is there anything better than a classic chocolate cornflake cake? These are a cake that I think most of us will remember making from our childhood. It's a really easy method which is why they're so child friendly.
With the surplus amount of chocolate we got this Christmas I felt had to use it up in some way. So using a bain-marie method I melted the chocolate until it was runny. Then I poured cornflakes into the chocolate in intervals until they were all covered. It's hard to say what ratio of chocolate to cornflake. I just work by eye and just make sure that the cornflakes are covered well.
Line a cupcake tray with paper cases and spoon a dollop of mixture into each one. To use more Christmas chocolate up we then decorated with smarties.
Leave to cool in room temp over night or put in the fridge for a few hours.
