Fish cakes

Fish cakes

This is a great way to get some oily fish into your diet. My mum makes these & they're delicious & really quick & cheap to make.

1/2kg Potatoes or 2-3 large potatoes.
3 tins sardines in olive oil
2-3 onions
half slice bread
2 tbsp flour
chilli or herbs of choice optional

Easy tartar sauce
4-5 tbsp Mayonnaise
2-3 gherkins, chopped 3-5mm
1 tbsp Capers, chopped finely (optional)

Boil the potatoes in a pan. (When they're done you can reuse the water for cooking the peas to save water.)
Put the sardines in a large bowl. Don't drain them just fork them out keeping the oil in the tins.
Fry the onions in a large frying pan in some oil from the sardine tins.

When the pots & onions are done, mix them in the bowl with the sardines with a fork.
Add the flour & rub the bread in your hands over the bowl into crumbs. (Saves blending them & more washing up).
Mix it all up nicely & then with your hands, make equal sized patties, about 2-3 inches diameter cook nicely.
Place some more of the sardine oil in the pan & fry them, turning when they're brown on either side. Leave room for turning.
While they're cooking, Make the tartar sauce & put your peas on.

When they're nicely browned after a few turns, drain your peas & your done.

Enjoy!
