Potato, Cauliflower & Bacon Bake

We had some cauliflower in the fridge so I though we'd have a sort of gratin/bake tonight.

I used;
6-8 large potatoes, halved
1/2 cauliflower, into florets
2 onions, chopped
2 rashers bacon, diced
6-8 mushrooms
200ml double cream
mature cheddar, grated

Large pan - boil the pots for 10 mins, then add the cauliflower until they're both cooked.
Frying pan - fry onions & bacon for 5 mins, then add the mushrooms.
Cut pots into 1cm slices.

Then make 2 layers in a roasting dish;
1st layer; 1/2 pots, 1/2 onion mixture & 1/2 cream.

2nd layer; remaining pots, cauliflower, onion mixture, cream & cheese to top.

Put in the oven for 30 mins until golden.
