Creamy Curry Carrot Soup

Creamy Curry Carrot Soup

tbsp oil
2 onions 
6 carrots
3 potatoes
1-2 tbsp medium curry powder (more if you like it more curried)
3 tbsp cream
pint stock (I just used a stock cube, but a proper stock is delicious if you have it.)

Fry onions for 5 mins
Add curry powder, carrots & potatoes, stir through onions for 1 min
Add stock to cover veg & simmer for 20 mins or until veg is soft
Blitz til smooth & add cream
Enjoy with crusty bread or whatever you've got in. Part-bake rolls are a good item to have in the freezer for if you run out of bread.
