Sausage, Onion & Mustard Pasta

Sausage, Onion & Mustard Pasta

Does exactly what it says on the tin really.

This is probably Emily's favourite meal, aside from loads of others but it's a very quick cheap staple for us & about £3-4 to make to feed at least 4.

Ingredients

sausages (I use cheap frozen ones but use as good or as cheap as you like)
onions (whatever sort you have)
wholegrain mustard (or english if you prefer or don't have wholegrain)
pasta (we usually use penne)
honey
cream (or cream cheese or milk)

I'll put down the quantities that I use but feel free to change them to suit your needs. I make quite a lot & then use it for packups or an evening snack.

Put about 300g penne in a pan of boiling water with a lid & cook. leave lid slightly off.
While that's cooking, in a separate large pan, fry 3 onions for 3 mins, then scissor cut 10-12 sausages into same pan. Get some colour into both.
Then add 2 tablespoons honey, 3-4 tablespoons wholegrain mustard (less if using english).
(If using milk, add that now & cook til it makes a thin sauce. This will also poach the sausages which makes them nice & soft but fried on the outside)
When the pasta's cooked, drain with the lid but leave 2-3 tablespoons water in it. (don't use colander - less washing up!) Add pasta to the other pan & stir in.
Now add half tub of cream or 2 tablespoons cream cheese to make enough sauce to coat the pasta, onions & sausages.

Bon appetite!
